Ingredients
- 450g chat new potatoes sliced
- 2tbs Parmesan cheese
- .5 cup chicken stock
PESTO
- 1 c basil leaves
- 1 cup parsley sprigs
- 3 cloves garlic
- 1 tbs pine nuts
- 2tbs chicken stock
- 1 tbs Parmesan
- 1 tbs lemon juice
- 1tbs water 2 tbs olive oil
Directions
- Process pesto ingredients.
- Lightly spray baking dish with oil
- Lay out 1/3 of sliced potatoes
- Top with 1/3 pesto & 1/2tbs cheese
- Repeat
- Heat stock to simmering
- Pour over potatoes
- Cover with alfoil
- Bake at 200 for 35 minutes
- Remove foil
- Cook 10 more minutes or until potatoes are soft
