I sometimes double the spices in this recipe because I enjoy the flavour but it is up to you.
Ingredients
- 2 cups brown sugar
- 2 cups flour
- 1 tsp salt
- 2 tsp cinnamon
- 1 tsp ground ginger
- 1 tsp nutmeg
- 1 tsp baking powder
- 1 1/2 cups vegetable oil
- 4 eggs
- 3 cups grated carrot
- 1 cup chopped walnuts
Directions
- Preheat oven to 180C. and prepare round cake tin.
- Combine sugar, flour, salt, spices, baking powder and oil in a bowl.
- Add eggs one at a time.
- Stir in carrots and walnuts.
- Cook for 50-60 minutes or until skewer inserted into the centre of the cake comes out clean.
