I really don’t like waste so with half a can of refried beans left in the fridge I needed to come up with a way to use it up. I’m a bit embarrassed to share this recipe actually because it is not the sexiest meal you’re ever going to come across, but it’s good. Quick enough for a work morning too, you could probably have it cooked by the time you have boiled the kettle and made a cup of tea. It is not complicated so I don’t really think you need a recipe, but I’ll share the process with you just in case you have a hankering for a filling and delicious breakfast. Avocado would go nicely with this too, but honestly the basic combo is a winner.
Method
- Set a fry pan over a medium high heat and when hot, crack your egg/s into the pan.
- While the eggs are cooking, put your tortilla on a plate, spread on the refried beans and add a good handful of grated cheddar cheese.
- Place the plate in the microwave to warm the beans and melt the cheese, about 20 seconds.
- When your eggs are done to your liking, add the eggs to your tortilla and splash on your hot sauce of choice. Wrap. Eat. Done!
