Crispy skin salmon with wasabi dressing (serves 4)

Ingredients

  • 1tsp rock salt
  • 2 tsp lime rind
  • 4 salmon fillets
  • 150g baby spinach
  • 2 avocados, chopped
  • 1 red capsicum, sliced
  • 1/2 red onion, halved, sliced
  • 1/4c drained pickled ginger
  • 1 green shallot, sliced
  • 1/2c fresh coriander
  • 100g crunchy noodles
  • Wasabi dressing
  • 1/2c whole egg mayonnaise
  • 1 1/2tbs olive oil
  • 3tsp wasabi paste
  • 3 tsp soy sauce

Directions

  1. Combine rock salt and lime rind and sprinkle over salmon.
  2. Brush salmon with oil and cook until done. Set aside and keep warm.
  3. Combine ingredients for dressing.
  4. Add salad ingredients together. Serve.
