Spiced beef skewers with eggplant salad

Ingredients

  • 2 tbs olive oil
  • 2 garlic cloves, crushed
  • 1 tbs ground cumin
  • 1 tbs coriander
  • 2 tbs finely grated fresh ginger
  • 2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 800g beef round steak, cut into thin strips
  • Tzatziki dip to serve
  • Eggplant salad
  • 8 small lebanese eggplants, halved lengthways
  • 8 small zucchini, ends trimmed, halved lengthways
  • 2 red capsicums, halved, deseeded, thin strips
  • 2 tbs olive oil
  • 1 cup torn basil

Directions

  1. Combine spice mixture and add beef strips. Skewer and place in fridge to marinate.
  2. Cook vegetables and beef on bbq. Serve with dressing.
