Ingredients
- 50g butter/ghee
- 2 medium onions, sliced
- 6 cloves garlic
- 5cm piece ginger, chopped
- 1kg lamb, cubed
- 300mls coconut cream
- 1 1/2 tsp salt
- 1 cup chopped tomatoes
- 2 tbs Agra Lamb & Coconut Curry Blend
Directions
- Heat butter/ ghee in a large saucepan, add the onions garlic and ginger and fry until onions are soft and brown.
- Add the spice blend and fry for a further 2 minutes. If the mixture is too dry then add a little water.
- Add the lamb and turn until the meat is evenly coated with the spice mixture. Add the coconut milk and tomatoes. The curry can either be left in the saucepan or transferred to a slow cooker and cook covered until lamb is tender. Add more liquid if necessary.
