Ingredients
- 1kg boneless white fish fillets (such as flake), chopped
- 1/4 cup firmly packed chopped coriander
- 3 green shallots, coarsely chopped
- 2 small red chillies, chopped
- 2 tsp grated lime rind
- 1/3 cup lime juice
- 1 tbs grated ginger
- 1 garlic clove, crushed
- 1 egg
- 1 cup vegetable oil
LIME MAYONNAISE
- 2/3 cup quality whole egg mayonnaise
- 5 fresh kaffir lime leaves, shredded
- 2 tsp grated lime rind
Directions
- Combine fish, coriander, shallots, chilli, line rind, lime juice, ginger, garlic and egg in the bowl of a food processor. Season with salt and pepper and process until combined.
- Shape mixture into patties, Cover with plastic wrap and chill in the fridge for 1 hour.
- To make lime mayonnaise, combine ingredients in a bowl and season with salt.
- Cook patties for 3 minutes each side and transfer to a plate to cool. Serves 8 as an entree.
